Salmorejo
Main ingredients:
- Tomato, bread, oil and garlic.
The Cordovan sister of Gazpacho. These two sisters go hand in hand. Let's say that gazpacho is more liquid and therefore drinkable and salmorejo has as a final result a paste or cream that is eaten with a spoon.
It has much more bread, and does not contain cucumber or pepper, so it is creamier. The formula is the same, mix these three ingredients in a blender and blend until you get a smooth cream with an intense flavour. Generally in bars it is served with chopped hard-boiled egg and serrano ham in strips or cubes.
It is highly recommended, especially in the hottest summer months when the heat is at its peak.
